How on earth are we supposed to use “glasses” to control alcohol intake?

I have written recently about wine intake and the effect of the alcohol on us (eg. last week’s post: The effect of red wine is different from white). One aspect of this topic has been recommendations for the maximum alcohol intake per day or week, for any given adult person. This intake is often expressed in “standard glasses” (eg. one glass per day on average). This is meant solely to be an approximation to actual intake, of course. As a guide, 1 Standard Drink is usually taken as being roughly equal to 12 ounces (350 ml) of beer, 5 ounces (150 ml) of table wine, and 1.5 ounces (45 ml) of 80-proof liquor.


There are three possible issues with using this approximation, in practice, for wine drinkers. The first is the variation in alcohol content of the wines of the world, which can vary from c.8% to c.16% (ABV). * Clearly, the latter wines involve the consumption of twice as much as alcohol as do the first ones, if we go by number of glasses. It is assumed, I guess, that in practice a standard glass has a standard percent alcohol, say 11—13% (Here's how much alcohol is in wine, from lowest to highest).

This issue has been discussed by the general media (Alcohol levels can make a big difference). In particular, it has been noted that we all differ in the rate at which our liver breaks down the alcohol we have consumed, and that this is also more problematic for females, on average — this means that the actual amount of alcohol does, indeed, matter.

The second possible issue is the size of the glasses that you are using. For example, it is easy to mis-judge the amount of fluid in larger glasses compared to smaller ones. The third possible issue is the shape of the glasses. That is, it is easy to mis-judge the amount of fluid in glasses of some shapes compared to others.

However, this is worth re-visiting, given the current state of discussions about health and wine.

So, let’s take a look at some wine glasses. Here is a selection for you. As suggested by the figure legend, these glasses are different in both size and shape, but they all contain the same amount of red wine. Does it look like it to you?

Clearly, half-filling most of these glasses would drastically mis-estimate the amount of wine contained. In particular, glasses often hold more fluid than we think. It is commonly reported that drinkers under-estimate the amount of alcohol they consume, thinking that a standard drink is of greater volume than it actually is, which is called the “over-sizing effect”.

We do, of course, need personally to take into account the shape and size of the serving vessel, when we try to judge the amount of wine being consumed (as shown above). This is not a trivial suggestion. For example, an experiment in 21 pubs, bars and restaurants in England (Impact on wine sales of removing the largest serving size by the glass. PLOS Medicine 21(1): e1004313) has reported that:
Removing the largest serving size of wine by the glass from those available reduced the volume of wine sold. This promising intervention for decreasing alcohol consumption across populations merits consideration as part of alcohol licensing regulations.
In other words, we really do mis-judge our own wine consumption when we try to base it on the number of glasses that we have consumed. In particular, it is reported that: Risky drinkers underestimate their own alcohol consumption. (Note that, in the extreme, the Riedel “Sommelier” Burgundy glass is famous for holding a full 750 ml bottle!)

This topic has also been discussed in the general media (The accidental binge drinker: how much we really pour). It has been suggested that drinkers should actually count each glass as being two servings, not one, when drinking out. At home, you can keep track of the bottle contents, not the number of glasses (although, in contradiction, see: Extra-large wine bottles are having their big moment). Just to confuse things, U.S. restaurants can vary a lot in how much they give you (You're not crazy, wine pours at restaurants are shrinking).

We also need to behave responsibly, of course, since alcohol does not mix well with many human activities, driving being the most obvious one. In my lifetime, I have been subject to the following restrictions on my blood alcohol content (BAC) while (allegedly) in control of a motorized vehicle:
  • 0.08 (back when I was a teenager in Australia)
  • 0.05 (currently in Australia — government slogan: “Under oh-5 or under arrest”)
  • 0.02 (currently in Sweden).
For a person of my weight, these roughly correspond to 3, 2 and 1 Standard Drinks, respectively. Now all I have to do is get my estimation technique right!

What do wine glasses and hamburgers have in common?

Short answer: their sizes have increased a lot during the past 30 years.

This is of importance because obesity is now considered to be an epidemic in many countries, particularly the USA. Indeed, for more than 20 years obesity has been seen as "the most challenging public health problem that we have faced" (Ref. 1). One of the things that is obviously associated with obesity is increasing consumption of energy-rich food; and one of the things implicated in increased consumption is the size of the portions being eaten — increased portions lead to increased energy intake, and if the energy is not immediately used then the person will put on weight.

The relationship between obesity and the size of portions is a complex issue, which I will not go into here. However, for those of you who are interested, there are a number of recent literature reviews (Refs 2, 3, 4, 5, 6, 7). The experimental consensus is that people consistently consume more food and drink when offered larger-sized portions, packages or tableware than when offered smaller-sized versions.

What is of particular interest for this blog post is that health professionals have been collecting data about increasing portion sizes over the years, and I thought that we might look at some of the data, and their consequences. Portion size is usually reported to be largest in the USA, and steadily increasing [Refs 8, 9], although data from Europe show similar trends — eg. Denmark (Ref. 10), the Netherlands (Ref. 11).


Increased portion sizes

People have now realized that there are two ways that increased portions have been happening, the first of which is related to hamburgers and the second of which is related to wine glasses. That is, food is often served as a discrete unit (Ref. 12), either as a single object (eg. a hamburger or a packet of crisps) or as a single serving (eg. a wine glass or a plate / bowl). Both units have been increasing in recent decades.

For hamburgers, Ref. 13 found that a single McDonald's hamburger weighed 1.6 oz when first introduced in 1955 but in 2002 varied in weight from 1.6-8.0 oz, Burger King's weighed 3.9 oz in 1954 but 4.4-12.6 oz in 2002, and Howard Johnson's weighed 3.5 oz in the 1970s and 5.0-8.0 oz in 2002. These are hardly small increases.

This is part of a general trend, in which the sizes of food products sold as a single package have increased through time. The next graph, from Ref. 14, shows the time when a larger unit size was introduced (ie. larger than when the product was first marketed) for a total of 181 different food products in the USA. The increase in portions has been rapid since 1980.

Moving on to the other category, products sold "loose" (rather than in a fixed package size), the next graph, from Ref. 15, shows the capacity of wine glasses available in England over the past 3 centuries. Once again, the increase has been rapid since 1980.

This is also part of a general trend, in which the sizes of other dinnerware have also increased through time. For example, Ref. 16 shows a similar graph of increasing size of dinner plates in the USA over the past century.

Studies of drink consumption

This raises the obvious question of whether increased sizes of glasses has any affect on the amount of alcohol consumed. The general consensus seems to be "yes". Here, I will briefly discuss a few recent experimental studies about the wine glasses, tumblers, etc into which drinks are poured in licensed premises (restaurants and bars), rather than at home.

Several years ago, the authors of Ref. 17 visited a number of bars in California, to check whether the wines, mixed drinks and straight drinks varied in alcohol level based on the size or shape of the glass it was served in (due to variation in the bartender pouring). They concluded that: “Straight shots and mixed drinks served in the relatively large pint glass ... were found to contain more alcohol than drinks served in a short wide glass. No other significant differences were found between glass types.” That is, in this situation wine glass size and shape made no difference.

Later, the authors of Refs 18 and 19 did similar experiments for wine glasses at three bar / restaurants in England. However, in this case the portion of wine served was identical in all cases — the only thing that varied was the size of the wine glass (see the picture above). They found that: “Daily wine volume purchased was [10%] higher when sold in larger compared to standard-sized glasses. This effect seemed principally driven by sales in the bar area ... Findings were inconclusive as to whether sales were different with smaller vs. standard-sized glasses.”

So, serving people in over-sized glasses led them to purchase more glasses of wine. It is worth looking at how this effect is assumed to work. The Delboeuf Illusion is usually considered to be the prime force, as shown in the next picture (from Ref. 16) — the plate on the left looks like it has less food, even though the two amounts are identical. The same is true of the two wine glasses shown above — if it looks like you are drinking less per glass, then you buy more glasses.

This idea was experimentally tested by the authors of Ref. 20, who asked their participants to fill a second glass with the same amount of wine as was present in the first (standard) glass — the second glass was either wider or taller or both, compared to the reference. The authors concluded that: “Participants under-filled the wider glass relative to the reference glass and and over-filled the larger glass relative to the reference glass. These results are broadly consistent with people using the relative fullness of glasses to judge volume, and suggest both the shape and capacity of wine glasses may influence perceived volume.” A similar conclusion was reached by the authors of a similar but much earlier study (Ref. 21).

However, these same authors (Ref. 22) also tested a different idea in the laboratory, that the effect might be produced by differences in drinking behavior — drinking rate, sip number and sip duration might be increased for larger glasses. Sadly, they found that: “Wine drunk from the larger, compared with the smaller glass, was consumed more slowly and with shorter sip duration, counter to the hypothesised direction of effect.” This might be due to the participants drinking alone in a laboratory rather than socially in a bar / restaurant.

However, for lager consumed from straight-sided versus curved beer glasses, the authors of Ref. 23 found that: “Participants were 60% slower to consume the alcoholic beverage from a straight glass compared to a curved glass. This effect ... was not observed for a non-alcoholic beverage. Participants also misjudged the half-way point of a curved glass to a greater degree than that of a straight glass.” So, glass shape mattered.


Marketing

This inevitably leads us to consider the affect that of all of this research might have on marketing. Because the actual food and drinks are usually only a small percentage of the cost of eating and drinking, giving customers a larger portion is a strategy that might increase total sales. This leads to the widespread practice of “super-sizing” — giving customers a lot more food (and calories) for only a small additional cost. This seems to be the main motivation for sellers increasing their food portions, as described above.

People seem to purchase larger portion sizes than they actually need (in terms of energy), for two main reasons (Ref. 2):
  • "value for money" — larger portions are attractive because they offer more value for money, ie. a lower price per unit;
  • "portion distortion" — larger portions can be perceived as an appropriate amount to consume on a single occasion, due to continuous exposure to larger food portion sizes.
These two ideas combine, because people tend to "clean their plate" when given a particular portion of food — they consume what they are served, no matter how much (or little) it is.

For alcoholic beverages, marketing has been discussed by Ref. 24, particularly with regard to “strategies aimed at recruiting new young customers, increasing consumption and nudging drinkers towards stronger products ... Particular attention is paid to the size of the glass and how this can best be manipulated to increase sales.”

The authors quote a number of UK trade publications encouraging the use of larger glasses:
Since 1995, the legally permitted measure sizes for wine by the glass in the UK have been 125 ml, 175 ml and multiples thereof ... In 1996, a spokesman from Carlsberg-Tetley brands urged licensees to call 175 ml a “standard” glass and 125 ml “small” ... Similarly, in 2001, licensees were advised that ‘The basic step is to move from 125 ml glasses to 175 ml ... With 175 ml as the standard and 250 ml as the large size, pubs increase both volumes and profits’ ... A 2004 article declares that small glasses ‘give the impression that the pub doesn’t take wine seriously,’ and that ‘getting customers to “go large” in glass size not only improves the experience, it’s also a tremendously efficient way of cranking up profit.’
So, it does seem that the drinks business is actively involved in the current obesity epidemic.


Postscript

There are "standard portions" described for many foods, usually based on daily diet requirements or other health considerations. For example, in the USA these standards are provided by the Food and Drug Administration (FDA), the Department of Agriculture (USDA), and the Centers for Disease Control and Prevention (CDC). These portions are often listed as "standard servings" on packaged food.

Although a "standard drink" is defined in terms of the amount of alcohol it contains, most people have little idea about what constitutes a standard drink in terms of volume, irrespective of whether it refers to wine, beer or spirits. In the experiment conducted by the authors of Ref. 25, almost all of the participants poured a drink that was too large.

Unfortunately, the so-called “standard drink” can vary considerably among countries. For example, in the USA a standard drink contains 14 g (0.6 oz) of ethanol, which would be 150 mL (5 fl. oz) of 12% ABV wine. However, in Australia, the standard drink contains only 10 g of ethanol, which is equivalent to 105 mL of wine. So, a bottle of 12% wine in the USA is considered to contain 5 standard drinks but in Australia it contains 7 such drinks. Obviously, with increased alcohol strengths of wine in recent years there are even more standard drinks per bottle these days!

Glasses for sweet wines

Demonstrating that different wine glasses suit different wines is a straightforward thing to do. Even novices can usually detect a difference, when given the same wine in different glasses. The trick, then, is finding the "right" glass for each wine — the one in which the wine seems to smell and taste best.

So, we have a selection of glasses in our house, and we often try the first glass of any bottle of wine in at least two different glasses, to see which one is most suitable. Most of these glasses are from the Spiegelau Vino Grande series, because that was what was on special at the time we first decided to acquire a selection. However, we also have a few glasses from the Riedel Vinum series.

Recently, we decided to try some new glasses for sweet (dessert) wines. The three that we tried are shown here.

The Port and Icewine glasses are machine-made crystal, while the Sauternes glass is hand-blown; and each one of the latter therefore costs about one-third more than a pair of the other glasses.

The first wine used for testing (as shown in the photo) was a half-bottle of Château Raymond-Lafon Sauternes 2003, a moderately good vintage for the sweet wines of Bordeaux. It was probably right in the middle of its best drinking window, with aromas of lemon, apple, honey, pineapple, and dried apricot.

In the comparison, there was little to choose between the Vinum Port and Vinum Extreme Icewine glasses, both of which nicely focussed the nose of the wine. However, the surprise outcome was that the Sommeliers Sauternes glass performed very poorly, with a very muted presentation of the aromas. That being said, I might choose the Extreme Icewine glass for this type of wine, as the larger volume displays the wine's colour well.

The second test wine was a half-bottle of Don PX Gran Reserva 1983, a pedro ximénez wine by Bodegas Toro Albalá, from Montilla-Moriles in the south of Spain. This is a much stronger and more syrupy wine than the sauternes, as shown by its colour; and it is still a youngster despite its 30+ years of age. It usually scores at least a couple of points better on sites like CellarTracker.

This comparison was completely inconclusive. No matter in what order the glasses were examined, the first one smelt strong, the second was muted, and the third one had almost no detectable aroma! So, the glasses had to be examined individually, rather than directly compared.

The Vinum Port glass emphasized the liquorice (and orange zest?) aspects of the aroma, while the Vinum Extreme Icewine glass emphasized the plum and clay pot aromas, and the Sommeliers Sauternes glass emphasized the plum and roasted coffee aromas. All three glasses nicely presented scents of raisins, dried figs, molasses, prunes, burnt caramel, honey, tar and chocolate. Stunning!

Since there is so little to choose between the glasses for this particular wine, I would use the smallest glass, in order to control the volume — this wine is simply too strong-tasting to want to drink much at a time (the after-taste lasts for minutes).

The third test was intended as a complete contrast to the previous wine. This was a 500 ml bottle of Swedish apple wine known as Maglehem n:o 4:15. This is a 15% alcohol wine made by Maglehems Musteri, using mainly Cox Pomona, Ingrid Marie, Cox Orange and Ribston apples, and then matured for 18 months in French oak. It is only mildly (ie. apple-juice) sweet.

In all three glasses, the wine had a bitter-sweet sensation of apples, quince, marmalade and basil. In addition, the Vinum Port glass emphasized an aroma of flowers and over-ripe apples, while the Vinum Extreme Icewine glass emphasized orange peel and dusty road (after being fairly muted at first). The Sommeliers Sauternes glass picked up the aroma of over-ripe apples, but less strongly, plus the dusty road, and added some bitter almonds. So, the latter glass probably edged out the other two.

The fourth, and final, test wine was a bottle of Framersheimer Kreuzweg Trockenbeerenauslese 1976, from Walter Kürner Weingut in Rheinhessen, in Germany. In strength and sweetness it is somewhere in between the first two wines. It is certainly the most mature of the four, while still being firmly in its best period.

All three glasses produced a profound sensation of raisins, honey and citrus, in both the aroma and the taste, and in that sense they were all good presenters of the wine. However, in this case the Vinum Extreme Icewine glass was the clear favorite, with a stronger and more taste-rich experience compared to the other two glasses. The Sommeliers Sauternes glass placed a bit more emphasis on a grapefruit-skin bitterness; and the Vinum Port glass showed a bit more plum aroma.

So, the bottom line from these four comparisons is that there was no consistent difference between the three glasses, that we could detect. These combined results contradict some other comparisons of these three glasses, such as that in the comments to this particular blog post: The Ultimate Glass Test.

Anyway, given that you should only buy wine glasses that you can afford to replace on a regular basis, the expensive Riedel Sommeliers glass may end up being put away in storage; as may the unnecessarily tall Riedel Vinum Extreme Icewine glass.
